The Copenhagen issue earns its reputation as one of Europe’s most exciting food cities without leaning on that reputation alone. We enjoyed the visit to the noma test kitchen. Watching a talented team develop dishes for one of the world’s most discussed restaurants is a different kind of behind-the-scenes access. The Flora Danica workshop is worth seeking out alongside it. A small handful of artisans making some of the world’s most precious porcelain by hand gives the issue a quieter kind of craft story to sit alongside the food.
