Issue 08 takes Lima and earns its reputation as one of the world’s great food cities through its history rather than its accolades. The anticuchos feature is the place to start. Beef heart skewers with roots in Quechua tradition and sixteenth-century slavery is a food story with real depth behind it. We also enjoyed the conversation with Chef Virgilio Martínez.
